STAA AGAR is based on the formulation described by Gardner and is recommended for the microbiological examination of meat and meat products according to ISO 13722 standard method.
Brochothrix thermosphacta is a bacterium belonging to the Listericeae family. It is a contaminant in meat processing, more present on pork and lamb meat than on beef and growth can be favored by fat, which has higher pH.
