Description
DG 18 (DICHLORAN GLYCEROL AGAR), formulated according to Hocking and Pitt, is a selective medium recommended by ISO 21527-2, for the enumeration of viable yeasts and molds in products intended for human consumption (or animal feed), which have a water activity (Aw) less than or equal to 0.95, typical of dry or semi-dried foods (dried fruit, spices, cereals, nuts, dried meat and fish) with the colony counting technique at 25 ° C ± 1 ° C. The method specified by ISO 21527 is not suitable for enumerating halophilic-xerophilic fungi such as Polypaecilium pisce and Basipetospora halophila.
The formulation of the medium, in accordance with the ISO 21527-2: 2008 Standard, contains glycerol (decreases the Aw), and Dichloran, a fungicide that inhibits the growth of many fungi by limiting the size of the colonies.
